Basic Vino Cotto Salad Dressing & Meat Marinade

Next time you need a great tasting salad dressing or a marinade for meat, reach for Vino Cotto.  Adding Vino Cotto to the dressing/marinade will give your dish that lovely raisiny sweet flavour which is delicious on simple tomato and rocket salads, roasted root vegetables and lamb, beef, quail and pork fillet dishes.

Dressings and marinades should be easy to prepare with simple thoughtful ingredients which you can spice up with herbs and garlic.  For best results, all your ingredients should be at room temperature when you begin. Prepare the dressing in advance to allow the flavours to combine, especially if you introduce herbs, garlic and onions to the mix. Don’t refrigerate. Just before serving, give the dressing a shake and pour.

Basic Vino Cotto Salad Dressing or Meat Marinade

(Adjust measurements to taste and quantity required)
½ cup Extra Virgin Olive Oil
2 tbsp Vino Cotto
2 tbsp red wine vinegar (optional)
pinch sea salt
Ground pepper

Flavouring options:-
Fresh herbs: thyme, rosemary, oregano, basil, mint (approx.. 2 tbsp)
Bulbs: garlic, onion
Vinaigrette: red wine vinegar, balsamic vinegar (approx.. 3 tbsp), Dijon mustards approx.. 1tsp)

Add all ingredients together, whisk until ingredients emulsify. Or seal the ingredients in a glass jar or bottle and shake to combine. Season to taste.
