Plum sauce with Vino Cotto

Plum Sauce with Vino Cotto 

A perfect sauce to serve with Roast Duck.

Ingredients
500g plums, stone removed and roughly chopped
3 tbsp brown sugar
1 cinnamon stick
juice and zest of 1 orange
1/4 cup Vino Cotto

Method

Combine all ingredients in a heavy based saucepan and cook over  low heat for 15-20 minutes until plums are soft and sauce has thickened.  Stir occasionally.  Being careful towards the end of cooking time as the sauce can easily burn.

Serve along side duck.
