Discovery Cheese Platter with Vino Cotto
Food is about discovery and what better way to explore Vino Cotto than by offering Vino Cotto with a cheese board.
Create an interesting and attractive cheeseboard by including:
– cheese with a variety of flavours and textures ranging from soft to firm,
– fresh or dried fruits, nuts and crackers,
– a small bowl of Vino Cotto with a spoon placed along side the cheese board.
The idea is to drizzle Vino Cotto on hard-aged cheese such as the Parmesan, Pecorino and Romano style cheeses. These hard-aged cheeses have a hard, granular texture and a concentrate bite and so drizzling Vino Cotto on these style of cheese tones down the sharpness but heightens their flavour. Everyone will love it.
My favorite combination is a cracker, freshly thin-cut slice of a firm pear, a slither of Parmigiano-Reggiano and a drizzle of Vino Cotto. Or toasted nut bread with fresh cut figs, slither of Parmigiano-Reggiano and a drizzle of Vino Cotto. Allow your guests to compose their own assortment.
